The spear like looking vegetable contains a good bit of vitamin K , vitamin E, vitamin A , potassium, selenium, folate, and chromium to just name a few And chromium helps balancing your blood sugar. Aha…. this means that it also can reduce the carvings for sugar. Asparagus also contains glutathion – a detoxifying compound that helps break down carcinogens and other harmful compounds like free radicals. Eating asparagus can help protect you against certain forms of cancer like bone, breast, colon, larynx and lung cancer.
You might as well have noticed that when you eat asparagus your urine starts to have a very particular smell. Well, asparagus contains asparagusic acid which when digested produces a compound that is similar to sulphur. This compound can not be broken down in the body and has to be excreted though the urine. The smell is very similar to rotten eggs but it is absolutely not harmful just smelly.
Although it is a spring vegetable you can now find it all year around. It is a bit on the expensive side but absolutely worth it. So think about throwing in a few asparagus spears to keep you healthy!
